Preparing the meat
Get some pork chops. Make sure they are not too thin, since you want a fair amount of meat around the stuffing! Make an incision to create a pocket-like space inside each pork chop.
Stuffing (enough for 4-6 pork chops):
Heat up some oil in a skillet over a medium-heat fire. Add 2 finely chopped cloves of garlic, 1 cup of diced onion, 1 cup of diced apple, 1 cup of chopped mushroom, a pinch of freshly cracked pepper and a pinch of sea salt. Give the skillet a good shake, then add some bread crumbs and some sage.
Let the mix bind, and stuff it inside the pork chops. Sprinkle the meat with salt and pepper, then move them over direct heat on your grill.
Sear each side for 2-3 minutes. Then move over to indirect heat and put the cover on for 5 more minutes. Make sure the meat has cooked all the way through.
