If you’ve never charcoal smoked spare ribs, it’s time to get off your couch, fire up the pit, and make some mouths water! This is how it’s done, ladies and gentlemen!
You will Need:
- Spare Ribs Rack(s)
- Yellow mustard
- Your favorite BBQ rib rub
- 1 Cup apple juice
- 1 Tbsp apple cider vinegar
- Aluminium Foil

Preparations & seasoning
Before we get to the actual smoking, you will need to prepare the ribs. First, remove the membrane that is attached to the bones side. Use a butter knife to get under it, then grab it with a paper towel and pull parallel to the rack to remove it. It might come off in several pieces.
Then, it’s time to give these ribs some extra flavor. Apply a thin layer of yellow mustard. This acts as a binder between the meat and your rub. It will also add a nice color during the cook. Then let the rib rack sit in the fridge for 3 hours.
Charcoal Smoked Spare Ribs
Set up your grill for indirect cooking in the 250-275ºF range. Place your ribs on the indirect heat side of the grill, and add some hardwood of your choice. (applewood on this cook).
Close the lid and let the ribs cook. At around 1.5 hours, quickly mop the rack with an apple juice/cider mixture. This will help keep them moist throughout the cook.
After cooking for 2 hours and 45 minutes, it’s time to wrap your ribs. Use either tin foil or butchers paper. Spread some butter, brown sugar, honey and a little bit of your apple juice mixture on the ribs, then wrap up tight with the meat facing down. Place it back on the cooker for 1 hour.
Having cooked the ribs in their wrap for 1 hour, take them off the heat, unwrap. Place them back on the grill, mop with your BBQ sauce of choice, and cook for an additional 20 minutes.
The ribs should be ready – rest at room temperature for 10 minutes, and enjoy your charcoal smoked spare ribs!
