Strong in aroma and rich in flavor, this herb rubbed chicken is a great excuse to fire up your smoker and do this cook for your entire family…
You will need (for 1 chicken):
- 2 cloves Garlic
- Kosher salt
- Black pepper
- 1/3 C olive oil
- Zest of 1 orange
- 1/2 orange
Smoked Herb Rubbed Chicken Recipe
For the herb rub: Use a mortar and pestle to mash salt and pepper with 2 garlic cloves. Once it has turned into a paste, add chopped sage, thyme and parsley, zest of one orange and 1/3 cup of olive oil. Again, use mortar & pestle to turn everything into a uniform paste.
Season the chicken (inside and outside) with Kosher salt and black pepper. Apply the herb rub on the outside of the bird, then place half an orange inside the cavity. Secure the legs with butchers twine.
Time to smoke that chicken! Place the bird on your smoker over high heat, and close the lid. After 35-40 minutes rotate the chicken, turning the other side towards the heat source to allow for an even cook.
Cook until internal temperature in the thigh reads 170°F. Pull the bird off the smoker, and let it rest for 15 minutes before serving.
