Yum… Bacon wrapped stuffed jalapeno poppers are definitely a crowd favorite. They are also very simple to make so watch the video, follow the recipe below, and prepare to be amazed…
Basic Ingredients:
- Medium size jalapeños
- Grated Cheese (your preference)
- Cream Cheese (Softened)
- Green Onion (Chopped)
- Bacon, thick sliced
Basic Supplies Needed:
- Sharp Knife
- Container for mixing your stuffing
- Toothpicks
- Strong mixing spoon
- Jalapeño (or apple) Corer (Optional but very handy)
Smoked Bacon Wrapped Stuffed Jalapeno Poppers
Cook (Smoke) Time: Approx 2-3 hours at 250 Degrees
Cut off the top (cap) from the peppers, and using a corer remove the seeds. Cut the hollowed out pepper in half along its length. You should now have two cup-shaped halves. If you want to end up with bite-sized poppers, cut them in half again, this time along the width to end up with 4 cups.
Mix the cream cheese, grated cheese and chopped green onion in a bowl. Use a strong spoon and mix until you end up with a paste.
Cut the bacon slices in half. Take a jalapeno cup and spoon on a little bit of the cream cheese. Wrap some bacon around the jalapeno boat. Use a toothpick to hold the bacon in place. Repeat for all the peppers.
Place the stuffed jalapenos on a Bradley rack and smoke at 250°F. Cooking should take about 2-3 hours. When the bacon is crispy and the cheese has melted inside, pull them from the cooker.
