Sizzling Tex-Mex Style Steak Fajitas Recipe
First things first: This recipe works best with skirt steak. But if you have no access to that particular cut, fear not! You can use flank or hanger steak, or, as a last resort, thinly sliced sirloin or chuck roast.
Next, marinate the meat. For the marinade, mix the following ingredients in a large bowl:
- 16 oz Lime juice
- 1 Tbsp Worcestershire sauce
- 1 Tbsp minced garlic
- ¼ Cup olive oil
- Tequila (to taste)
- Cilantro leaves (fresh)
- Chili powder
- Smoked paprika powder
- Red pepper flakes
- Black pepper
- Fajita seasoning
Place the skirt steak in the marinade. Cover the container and place it in your refrigerator, and flip the steak every 2-3 hours. Marinate for a minimum of 4 hours, up to 24 hours if you have the time.
Time to fire up your grill!
Place a skillet over direct heat with some vegetable oil in it. When the oil is hot, add some sliced onion. Let it sweat for about 4 minutes before adding the chopped red & green bell peppers. After 3 more minutes, remove the skillet from the heat.
Place the cast-iron fajita dish over direct heat to prepare it.
Drain the marinade from the skirt steak and place it over direct heat on your grill. Sear each side for 4 minutes. In the last minute you can warm the tortillas up as well.
Cut the steak into thin slices, then place them alongside your veggies on the hot fajita dish. You are now ready to serve your very own sizzling Tex-Mex style steak fajitas!
