This coffee rub compliments just about any beef cut, however today we’re cooking coffee rubbed steak, so buckle up because we’re taking a ride to flavortown…
You will need:
- Cowboy Steak
- Canola oil
- ¼ cup ground Coffee
- ¼ cup Ancho Chili
- 2 Tbsp Brown Sugar
- ¼ cup Pickling Spice
- 2 Tbsp Paprika
- 2 tsp Salt
Coffee Rubbed Steak Recipe
Begin by mixing the Coffee Rub ingredients. This can be done best using a coffee grinder, to end up with a completely uniform rub. Either way, mix the ground coffee, ancho chili, pickling spice, brown sugar, paprika and salt. Smells good, doesn’t it?
Once done, apply a little canola oil on the steak, followed by the rub. Let the spices work on the meat while your grill is heating up to about 250°F.
Since this is a reverse sear recipe, start off cooking the steak over indirect heat. This is more of a slow roast, so insert your thermometer probe and wait until internal temperature hits 120°F.
At this point, remove the steak from the heat and wrap it in foil. Allow carryover temperature to cook it further to an internal temp of 130°F (medium-rare).
Finally, give the steak a good sear on both sides. Let the meat rest for a few minutes, then dive right in!
