Perfect Medium Rare Grilled Porterhouse Steak Recipe
For this guide we’ll go for the classic, no-nonsense approach to seasoning: sea salt and freshly ground black pepper. You can, of course, use any other spices you like, but there’s really not much you can do to improve on a delicious beef steak like this one.
On to the pit! Get your BBQ hot and ready for cooking over direct heat. Use a few chunks of red oak for the smoke. Season the grates with Canola oil for some extra flavor.
Throw the steaks on the grill, and close the lid. This will extinguish the wood a little and allow the smoky flavor to enter the meat.
Cook to a core temperature of 130-135°F for a medium rare. Let the meat rest for 5-10 minutes before serving.
