- Pizza dough (14 oz)
- Pepperoni (diced)
- 3 T Olive Oil
- 1 T Butter
- ¼ t Dried Parsley
- ¼ t Dried Oregano
- 2 cloves of garlic (crushed)
- ½ t Dried Italian Seasoning
- ¼ t Crushed Red Pepper
- Pecorino Romano cheese
Grilled Pepperoni Garlic Pull Apart Bread Recipe
To begin, let the pizza dough rise overnight in the fridge.
On the next day, light up grill and using a cast iron skillet warm up some the olive oil and butter. Throw in the diced pepperoni, and let it simmer a bit before also throwing in the herbs and crushed red pepper. Then let that go for another minute or two and add the garlic. Cook for yet another minute and remove the skillet from the heat. Pour the mix into a metal bowl to avoid burning the garlic, and let it cool.
While the pepperoni oil is cooling in a bowl, go ahead and make the garlic knots. Roll out the pizza dough to press out any bubbles, then cut in strips. Tie each strip into a knot and toss them all into the pepperoni oil. Place the knots back into the cast iron, and pour over any oil/pepperoni left in the bowl. Top with some freshly shredded cheese, cover and let it rise for 2 hours.
Get your smoker running at a temperature of 400-450°F. Place the skillet on the cooker, close the lid and smoke for about 20 minutes. Afterwards top with some more shredded cheese and enjoy!
