While you’re waiting for that long cook to finish, you may as well enjoy these bacon wrapped jalapeños stuffed with peanut butter and jelly. That’s right, PB and J! Don’t believe it, just try it and you’ll certainly change your mind.

PB & J Stuffed Bacon Wrapped Jalapeños (Αtomic Buffalo Turds)

Start off by slicing your jalapeño peppers in half long ways. Remove all the seeds, and clean the inside out completely. You can save the seeds and use them to add spice to anything you want including your peanut butter and jelly stuffing.

Grab your favorite brand of peanut butter and jelly. Or you could even use your homemade mixes if you’re in to that sort of thing. Scoop about a teaspoon of each into each of the halved peppers and lay them out on a sheet or large piece of foil to be ready to wrap.

Then wrap each stuffed pepper half with a strip of bacon. You’ll want to use thin sliced bacon and avoid thick cut bacon because the thicker cut bacon takes longer to cook. The bacon should wrap all the way around the peppers and stick to itself. If you are using larger peppers, or if the bacon just won’t stay put don’t worry. You can easily secure it with wooden toothpicks by poking them through the bacon and entire jalapeño.

You now have what are typically referred to as atomic buffalo turds. Next up, time to put some smoke on these sweet and savory meat morsels of goodness! Set your pit up for indirect cooking. Place your PB&J atomic buffalo turds on your grates, a Bradley rack or even a cookie sheet would work. Finally, let the heat and smoke do its magic.

You will know the stuffed bacon wrapped jalapeños are ready when the bacon becomes crispy. This shouldn’t take too long if you’re using thin cut bacon. Let them cool down for 10 minutes before serving.
