Jef’s Guinness BBQ Sauce Recipe
Let’s get this party started!
As always, it’s best to prepare your ingredients first. Dice the onion – make sure you get one that’s at least the size of a baseball, because you’ll need a lot. Also slice your 2 limes in half and juice using a fork, and mince the garlic cloves.
Next up, mix the tomato juice, Worcestershire sauce, and lime juice in a bowl. Also measure out the other ingredients in separate containers.
Next, fire up your stove and place a sauce pan on it (or if you’re feeling adventurous, use the indirect heat side of your grill with a suitable pan). Melt 2 tablespoons of salted butter in it.
When the butter is hot enough, throw in the diced onion. Saute for a few minutes until it becomes translucent. Then add the beer, followed by the rest of the ingredients – except for the honey. When adding the cayenne pepper, think about how spicy you want the sauce to be and adjust accordingly.
Next, stir well until the sugar melts in the liquid. Bring the mixture up to a boil, then lower temperature and let the sauce simmer. At this point, also add the honey, so it can melt.
Finally, let the BBQ sauce simmer for 35-45 minutes with the lid on, to avoid sauce splattering all over your kitchen.
Check on the thickness of your sauce, and adjust simmer time until you have reached the desired consistency.
Let the sauce cool down, and store in glass jars or other food safe containers.
