You will need:
- 1 whole cut up chicken
- Lime juice
- 1 red bell pepper (diced)
- 1 yellow bell pepper (diced)
- Some spring onions (cut up)
- 1 medium onion (diced)
- 2 Tbsp of diced garlic
- Salt and Pepper to taste
- 1 Tbsp of hot sauce
- 2 Tbsp of Jamaican Browning Sauce
- 3 Small roma tomatoes (diced)
- 5 sprigs of fresh thyme
- Some hot water
- About 20 pimento seeds (allspice berries)
Jamaican Brown Stew Chicken
Wash the chicken with lime juice and vinegar, then dry it.
Place the chicken pieces in a large bowl. Add all the ingredients one by one, mixing each time to make them spread as evenly as possible. Let the chicken marinade in the fridge overnight.
The next day, set up your pit for smoking over indirect heat. Scrape the marinade off the chicken and place them on the pit. Smoke the chicken almost all the way through.
Next, place a skillet over direct heat on your pit. Lay down some oil and saute the remaining marinade. Then add back the chicken and a cup of hot water, and let it simmer for about 45 minutes to an hour adding hot water as needed.
When done, serve over hot rice and enjoy!
