Nothing goes better with your favorite beer than these grilled pizza rolls. Whether it’s October or any other time of the year, these little morsels of goodness are going to be the star of your party.
- Pizza dough
- BBQ sauce 1 cup
- Pizza seasoning
- Cheddar cheese shredded, 1+1/2 cup
- Chili pepper 1, sliced
- Roasted onions 1 cup
- Bacon (enough strips to wrap the entire roll)

This is going to be a quick one, so don’t blink! Have your ingredients ready, chopped up, shredded, and measured out wherever necessary. Let’s get right into it!
Step one, lay down your pizza dough. If you have parchment paper, lay down a big piece of it and work your dough on top – this will make things a lot easier in a bit.
Spread out the dough in a large, rectangular shape. This is also how long the pizza roll is going to be prior to slicing it into smaller ones.
Then top the dough with BBQ sauce, and spread that out evenly with a spoon or spatula. Season to taste with your pizza seasoning of choice.
Time to start adding some serious ingredients. Spread your shredded cheddar cheese on top, followed by the chili pepper and roasted onions.
Next, the part where you’ll thank us for the parchment paper tip: rolling the pizza roll. Grab one end of the paper and start rolling the dough on itself, pulling off the paper as you go.
Finally, let’s wrap the pizza roll in bacon. Simply lay down the bacon strips one next to the other and place the pizza roll in the middle. Now take both ends of the bacon strips and wrap them around.
Cook the pizza roll over indirect heat at 350ºF. The roll is ready when the bacon becomes perfectly crispy and you can see the dough rising through the seams.
