I don’t get it. You’re supposed to smash it on the grill, not the countertop. I stopped the video at that point. Not worth watching the rest of their going to do it wrong right off the bat.
If you smash it on the grill you smash out all the flavor.

Yes Joe Your Right, I Cooked In Restaurants For 41 Years & We Made Plenty Of Burgers On The Grill & I Was Taught If You Smash The Burger On The Grill, You Will Smash Out Of The Grease Out & It Will Be A Dry Flavorless Burger !

I live in london, UK, we have a few five guys here and there but it’s expensive. Your method is amazing it right on the nose. I added some really crispy bacon and left out the cheese. It tasted exactly the same as what I order at five guys. Thank you for sharing.
