Marinating Your Chicken
To marinate the chicken properly you have to portion it. You can just cut it in half with a knife, or follow the method shown in the video. When the chicken has been portioned, rinse it, let it dry and put it in a large ziploc bag with the marinade. Leave in the refrigerator for 4 to 6 hours.
Grilling Your Chicken
Time to set the grill up. Arranging the coal under one side of the grill will work well for cooking chicken, since you want to avoid cooking the outside while it is still raw inside.
Put the chicken portions on the outer wall of the grill, on the opposite side from where the coal is with the breast side away from the heat. Put the lid on with the vents fully open and over the chicken.
Cook until internal temperature reaches 165F. Use a high quality reliable meat thermometer to properly measure your temperature. After it reaches that temperature, drag the chicken directly over the heat for a short while to crisp the skin a little. In total, cooking will take about 40-45 minutes. Let it rest for a while before cutting it.
