Drunken chicken recipe – the title says it all. Spatchcocked chicken, Jamaican style Beer and tasty, tasty smoke. This recipe has people who are not big fans of chicken admitting that this cook made them reconsider.


  • Whole chicken
  • Coarse salt
  • Finely ground black pepper
  • Cayenne pepper
  • Barbecue sauce
  • Jamaican style Beer (3 Cans of 12 Ounce each)

You will also need:

  • Pimiento wood (optional)
  • Aluminium Pan

Drunken Chicken Recipe: Spatchcocked Caribbean Style BBQ

The preparation for this recipe is simple: To “Spatchcock” the bird, first remove the spine using a pair of poultry shears. Push the two sides of the chicken down, and using your fingers remove the keel bone (breastbone). Season the bird with coarse salt, finely ground black pepper and cayenne pepper.

Get your grill up and running with lump charcoal and some pimiento wood for cooking. Position a deflector plate above the charcoal. On the deflector plate, position a drip pan and fill it with Jamaican style beer. Bring the temperature up to 350°F.

Place the chicken on the grill and let it cook for about an hour, or until the meat starts to withdraw from the bone. Mop the chicken with BBQ sauce and let it cook for another 15-20 minutes. Mop the bird again, and cook for 10 final minutes.

Pull the chicken off the smoker and let it rest.
