This double smoked potatoes recipe is definitely a crowd favorite! Cooked alongside whatever you have on your smoker and served as a side dish or appetizer, this is definitely worth a try.
- Large Baker Potatoes
- Olive Oil
- Sea (or Kosher) Salt
- Grated cheese (your favorite)

Double Smoked Potatoes Recipe Loaded With Extras
Begin by coating your potatoes with olive oil, and liberally sprinkle with Kosher salt. You can do this inside a large dish/container to make life easier for you. Smoke those directly on the grate on a low temperature for about 3 hours to soften them up.
When the potatoes are soft enough, remove them from the smoker. You might want to use heat resistant gloves, since the potatoes will be very hot.
Proceed to slice the potatoes in half, to make 2 “boats”. Hollow out the potato halves with a spoon, placing the insides in a a bowl. Add 1 stick of butter to the hot potato insides so it melts, and mix well. Add ½ block cream cheese, bacon bits, diced green onion and jalapenos. Mash the ingredients together until the mix is as uniform as possible.
Fill the potato “boats” up with stuffing, and top with some shredded cheese (press down into the stuffing). Place the potatoes back on the smoker for 30 minutes.
When done, top with sour cream, avocado slices and finely minced green onions.
