Who said you can only grill meat? This is how you wow your guests with a delicious blueberry pie on the grill.
Cast Iron Blueberry Pie on a Weber grill
The quantities in this recipe are calculated for making a pie in a 9” cast iron skillet. If you want to make a larger pie (which you probably do), adjust the recipe accordingly!
Preparing the Pie Filling
While you have your grill preheating to 375ºF, go ahead and prepare the filling for your blueberry pie. The ingredients you’ll need for the filling are:
- 4-5 Cups Blueberries
- 1/2 C Sugar
- 4 T Corn Starch
- 1 T Lemon Zest
- 1/2 Lemon, Juiced
- Pinch Salt
- 1 T Cinnamon Sugar
Put 10% of the blueberries apart – put them in a large bowl and smash them. This will release the juices and flavor to the rest of the filling. Then, in the same bowl, add the sugar, corn starch, lemon zest, lemon juice, cinnamon sugar, and a pinch of salt.
Mix the ingredients until you get an eve, blueberry colored mix.
The Pie Crumb Topping
Mix the following ingredients in a small bowl, until you end up with crumbs of your desired consistency. Slowly mix in more flour if necessary.
- 1/2 C Flour
- 1/3 C Sugar
- 3 T Butter
Making a Pie In The Cast Iron
Lay down a piece of parchment paper on your skillet – this will make removing the pie a lot easier. Then mold your pie crust (home made or prepared) into the skillet.
Dump in the blueberry filling (don’t forget to pour the remaining liquids on top!) Spread the filling with a spoon for even coverage. Crimp the edges of the dough, and finish with the crumb topping.
Place the skillet over direct heat on your grill. Cook for about 1 hour, or until the pie filling starts to bubble.
Rest at room temperature for a while, then enjoy!
