  • 1 pork loin (~2 pounds)
  • Steak dry rub
  • Butchers twine

Brine ingredients:

  • 1 onion chopped fine
  • 4 bay leaves
  • 2 cinnamon sticks
  • 6 cloves
  • 20 black peppercorns
  • 6 tablespoons of brown sugar
  • 6 tablespoons coarse salt
  • 2 cups hot water
  • 4 cups cold water
  • 6 tablespoons bourbon

Brined and Smoked Pork Loin Recipe

First step: creating the brine solution. Dissolve the sugar and the salt in 2 C hot water. If it does not dissolve, place the water over a stove and stir. Put the rest of the brine ingredients into a 1 gallon ziploc bag, along with the pork loin. Add the dissolved sugar/salt to the bag.

Put the ziploc in a bowl and place it in the fridge for 18 hours. Then rinse off the pork loin, and carve the fat cap with a knife. Using butchers twine bind it into a nice, round shape. Coat the pork loin generously with steak rub.

Smoke the pork loin at 225°F. The target internal temperature is 145°F. When done, let the pork loin cool down completely, then remove the butchers twine and slice thin. Add the slices to some bread, dress as you please (maybe add some cheese), and boom! Best smoked pork loin of your life!
