  • 1 Egg
  • Butter
  • Bamboo Charcoal
  • Caster sugar
  • Active dry yeast
  • Whole milk
  • Colby cheese shredded
  • powdered milk (whole if you can find it)
  • Cream of tartar powder
  • Non-flavored gelatin
  • Squid ink
  • Onion
  • black soy sauce
  • 80/20 sirloin meat for patty
  • Black pepper

BK Black Burger Recipe (Kuro Cheeseburger)

Let’s begin with the bun dough.

In a bowl, add the following ingredients one after another: 21⁄2 cups of bread flour, 3 tablespoons + 2 teaspoons caster sugar, 1 tablespoon bamboo charcoal, 2 teaspoons active dry yeast, 1 teaspoon salt. Mix it all together. If you find that it is not dark enough, add some more bamboo charcoal. Set the bowl aside.

For the next part we will need an ingredient called Tangzhong. To make this, mix together one part flour with five parts water (by weight) to make a smooth paste. Heat the mixture up in a saucepan until it reaches exactly 65°C (149°F), then remove it from the hob, cover it and let it cool until it is down to room temperature. It should now be quite thick.

Add the following ingredients to your mixer: 1⁄2 cup whole milk, 1 large egg, 3 tablespoons room temperature butter cut into small dices and 120 grams of tangzhong. Use the mixer to break all the ingredients down to a uniform mix.

Get the bowl with the dry ingredients, and “dig” a hole in the center where you can pour in the wet ingredients. Using a dough hook attachment to your mixer, mix until the dough has become one piece and does not stick to the walls of the bowl anymore. Let the dough rest at room temperature in a covered bowl. We want it to raise to about double its current size.

Time to make the BK black burger cheese. In a small pan boil 1⁄2 cup whole milk, 2 teaspoons of whole milk powder and 1 teaspoon of non flavored gelatin. While this is warming up, get your mixer bowl and add 12 ounces of shredded Colby cheese, 1 tablespoon of powdered milk (whole milk if you can find it), ⅛ teaspoon cream of tartar and 1 teaspoon salt. While blending, then add the boiling milk and gelatin and about 2 teaspoons of squid ink.

When everything looks uniform, use a disposable loaf pan to get the mixture into the right shape. Keep in mind that you want to be able to slice cheese off later. Cover the pan with cellophane and leave it in the fridge.

Chop up some onion and slowly reduce it. Then mix it with 2 teaspoons of black soy sauce, 1 teaspoon of sugar and 1⁄2 teaspoon of squid ink.

Preheat your oven to 350F. Shape the dough balls, and put them in the oven for about 30 minutes (until they are baked).

Fire up your grill, and get ready to cook that patty! Make sure to season the meat with salt and black pepper. Grill the patty to your preference.

Now the only thing left is to assemble your BK black burger, and enjoy it!
