Drying Out the Belly Skin
Let’s start with a little secret. If you want crispy skin on your pork belly, you’ve got to dry it out first. Grab a large enough tray, and layer the bottom with sea salt. Place the pork bellies on top, with the skin facing down (into the salt). Place the tray in the fridge for 24 hours.
When you’re ready to cook your pork bellies, rinse off the salt with cold, running water. Pat dry with a towel before moving to your grill or smoker.
You can puncture or score the skin, however this is completely up to you. Scoring will allow for more crispy surface area which is always a plus, however it’s up to you.
Cooking The Pork Belly
The secret of this juicy crispy pork belly recipe is cooking at a high temperature, over indirect heat. Set up your cooker accordingly for an indirect cook at high heat as suggested.
Another trick for crispy skin is, surprisingly, vinegar. Brush some white vinegar on the skin every 30 minutes throughout the cook, and see what happens. You’ll thank us later.
Cook the pork bellies to an internal temperature of 196ºF. Be sure to use a high quality reliable meat thermometer to accurately measure the internal temperature of your pork belly.
If at this point the skin has not reached optimum crispiness, then fell free to raise the temperature and let those bellies cook for another 30 minutes or more until your desired crisp is reached.
