BBQ Roast Beef Recipe | How To Cook Roast Beef
After trimming and cleaning up the beef roast, it’s time to oil it up! Use olive oil if you can. This will help the seasonings stick to the meat, and also give taste and color.
Sprinkle the roast with the minced garlic, then apply a layer of your choice of BBQ rub. Pro tip: use a traditional BBQ rub, with salt, pepper, onion & garlic being its base ingredients. Then, apply a light second layer of rub, using any Southern style beef rub. This will add great color, as well as a rich flavor profile.
Allow the prepped beef roast sit for 1-2 hours, to allow the meat to sweat through the rub.
In the meantime, set your grill/smoker up for cooking indirectly at 325ºF. When the pit is ready, start cooking the roast.
Cook to a core temperature of 140ºF (adjust to preferred donenes). Once it’s up to temp, wrap the BBQ roast beef in some foil and let it rest at room temperature for 20 minutes before slicing.
