Have you ever asked yourself, what could possibly make a perfectly cooked pork tenderloin even better? Bacon, of course! In this Bacon Wrapped Pork Tenderloin we will learn how to make this dish that is beyond delicious.

Bacon Wrapped Pork Tenderloin (Jamaican Jerk Seasoned)

For the marinade you will need:

  • 3 Habaneros
  • Scallions
  • 1/2 Onion
  • Ginger
  • 4 cloves Garlic
  • 2T Thyme
  • 1T Light Brown Sugar
  • 1/4t Cinnamon
  • 1t Allspice
  • 1t black pepper
  • 1t Kosher Salt
  • 1/2C Lime Juice
  • 2T Soy Sauce
  • 1T Oil
  • 1/4C White Vinegar

Chop up the scallions and remove the spores from the Habaneros. Ready your blender, and add all the ingredients mentioned above. Blend until the mix becomes uniform.

Time to prepare the meat. Wash it down and trim any silver skin. Get a plastic bag you can easily seal, and put the meat inside. Add the Jerk Marinade but reserve about 1/2 cup for later. Make sure the marinade gets everywhere in the bag, then leave it in a refrigerator for 24 hours.

After the 24 hours have past, it is time to light up the smoker! While the temperature is rising, we can now add the bacon. Use 6-7 strips of bacon, depending on the size of your tenderloin. Line them up and position the meat on top, then wrap the bacon around it. The Bacon Wrapped Pork Tenderloin is now ready to move onto the smoker.

While the meat is smoking, get 1C Brown Sugar and 1C Cider Vinegar. Mix in a pot. When the sugar has started to dissolve, add the reserved marinade. Mix thoroughly while it is heating up.

When the pork tenderloin reaches 110F internal temperature we can start basting. We can remove it from the smoker when it reaches 145F internal temperature.
