Prepare your taste buds because these bacon wrapped duck nuggets are about to take you on a wild ride to flavor town. Use as a summer themed appetizer, game day snack, or simply something delicious you can sink your teeth in to while you wait on those longer cooks.
Ingredients
- Duck breast(s)
- Bacon Strips
- Pineapple
- BBQ rub
Glaze
- 1 Cup BBQ sauce, non sweet
- 1/4 Cup Pineapple preserves
Bacon Wrapped Duck Nuggets Recipe
Get yourself a nice, fresh duck breast (or more). Wash with plenty of running cold water, then pat dry with a paper towel. Proceed to cut the duck into small cubes, about 1.5″ to 2″ across (keep in mind, they are going to shrink while cooking). Then season each cube with your favorite rub or spice mix on all sides.
Slice the bacon strips into thirds, and use one third to wrap each duck nugget. Season the bacon wrapped duck nuggets on the outside as well, then place them spaced apart on a Bradley rack for easier transport.
Preheat your smoker, grill (set up for indirect cooking), or oven to 350ºF. Once the temperature is stable, place the Bradley rack in a roasting pan that will fit it, then move both to the cooker. Cook for 35 minutes at 350ºF.
While the nuggets are cooking, there’s more than enough time to prepare the glaze. For this, mix 1 cup of non-sweet BBQ sauce with 1/4 cup of pineapple preserves. Heat the sauce up for 10 minutes (if you’re using a ceramic bowl to mix the ingredients, just put it next to the duck nuggets on the cooker).
When the duck has been cooking for 35 minutes, dip each and all of them in the sauce, then place them back on the heat for another 10 minutes. When ready, get some tooth picks or short skewers, and skewer each nugget together with a small pineapple cube.
Serve alongside the sauce.
