If it’s the Holidays or any other time of the year, this Christmas ham recipe is absolute perfection in every way.
You will need:
- 1 Ham (used here: 13 lbs)
- 2 cups Apricot
- 1 cup Apricot Preserve
- 1/4 cup Honey
- 1/2 lemon, juiced
- 1/4 cup Dijon mustard
- 1 cup brown sugar
- 5 Whole Cloves
- Pinch of Cinnamon
Apricot Glazed Christmas Ham Recipe
First, let’s prepare the glaze. In a heated pan mix the apricots (with the syrup that comes in the can), apricot preserve, Dijon mustard, lemon juice. Heat the mix up while stirring until the ingredients combine completely.
Moving on to the ham. Use a meat knife to score the signature diamond shaped cuts into the ham (about 1/4 inch deep).
Place the ham in a roasting pan, pour the honey on top and spread it all over the meat. Spread the brown sugar on top- this is going to caramelize and add a great texture. Pour the glaze into the roasting pan around the ham. The liquid will provide moisture throughout the cook.
Preheat your smoker to 300ºF. Place the roasting pan on your cooker and smoke until internal temperature reaches 155ºF. During this time, every 20 minutes take some of the glaze and drizzle it over the ham.
When internal temperature hits 155ºF, wrap the ham in foil and let carryover temperature work on the meat for another 20 minutes.
