- 6 slices of Bacon
- 30 g Cacao powder
- 120 g Couverture chocolate
- 100 g White chocolate
- 60 g Dark chocolate
- 60 g Milk chocolate
- 120 g Sugar
- 120 g Butter
- 50 g Hazelnuts (grounded)
- 1 Egg
- 150 g Flour
- 1 Vanilla pod
- 1 tsp. Baking powder
Triple Chocolate Bacon Cookies
Fire up your grill, and wait for the temperature to rise.
Heat a pot of water and melt the couverture in a water bath. Once it is molten take it off the heat.
Cut the bacon into thin slices and fry in a preheated pan until crispy. When ready, drain the fat off the bacon on a kitchen towel.
Put the butter, the whole egg and the sugar into a mixer and beat until fluffy. Add the melted couverture, hazelnuts, cacao powder and the pith of the vanilla pod while continuous stirring. Gently mix in the flour, baking powder and the bacon. Chop the rest of the chocolate coarsely and add it to the mix.
Using a spoon or an ice-cream scoop, form balls out of the dough and place them on an oven tray covered with baking paper.
Prepare your grill for indirect heat. Place the tray with the cookies on the grill, close the lid and bake at 320°F for about 20 minutes.
When the cookies are ready, allow them to cool down on the tray for a few minutes.
