The Ultimate Roast Beef Sandwich Recipe

For this sandwich recipe, you don’t want to truly smoke the beef -you only want to roast it, while still embedding some smoke in it. To do this, set up your grill for indirect cooking, with a dripping pan underneath the indirect side. Then add 1-2 chunks of peach (or other fruit) wood to your charcoal at the beginning of the cook. Target temperature inside your pit is 275-300ºF.

Bind some butchers twine around the sirloin to hold it in shape, or use the netting if it came in one. Season with kosher salt and freshly ground black pepper, then place it over the dripping pan on your pit.

Close the lid, and let the beef cook to an internal temperature of 125ºF. When it hits the mark, move it over to room temperature and let it rest.

In the meantime, place a cast iron skillet directly over the heat source, and heat up some vegetable oil. Get your horse radish slices -as thin as possible- and give them a quick fry. When they become golden brown, use a skimmer spoon to get your horse radish chips out of the oil. Proceed to throw the jalapeno and habanero pepper slices in the oil to give them a little crisp as well.

Finally, give the buns a slight toast on one side. Then place a slice of sharp Cheddar cheese on the top bun, and let it melt into the bread.

Time to assemble your sandwich! Spread some mayo on the bottom bun, followed by lettuce, some tomato slices and sweet onion. Slice the roast beef as thinly as possible, and add a generous portion to your sandwich. Garnish with horse radish chips, caramelized pepper slices and some more mayo on top.
