- 2 lbs Ground Beef (chuck)
- 2 lbs Chorizo Sausages
- 24 oz Tomato Paste
- 64 oz Canned Pinto Beans
- 56 oz Diced Tomato
- 2 large Onions
- 2 Red Bell Peppers
- 2 Poblano Peppers
- 12 oz Pickled Jalapeno Peppers
- 6 Garlic Cloves
- Bay leaves
- 1 tsp Cayenne Pepper
- 2 Tbsp Chili Powder
- 12 oz Beer
Texas Style Chorizo Chili Recipe On The Grill
To start this chorizo chili recipe off, you’ll want to give the sausages and the beef a good sear. Make a couple of burger patties from the beef and throw them on the grill alongside the chorizo sausages for a few minutes. This will give the meat extra flavor in the chili.
Proceed to warm up some vegetable oil in a large pan.
Chop up the fresh veggies and add them to the oil, mixing up until they start breaking down. Then add the seared beef burgers and sausages, chopping them up or breaking them up with your hands before they go into the mix.
Next add the tomato paste, beans, diced tomato, pickled jalapenos, and your spices. Mix well, then add the beer and mix again.
Finally, let the chili simmer in the pot for 2-3 hours.
When the chili is ready, serve in whichever manner you like: we suggest you top with shredded cheese and corn chips, and enjoy alongside a bottle of good beer.
