These mouthwatering stuffed jalapeños with cream cheese and crab meat, wrapped in bacon, are the ultimate side for your next backyard cook out, get some.
Stuffed Jalapenos a.k.a. Atomic Buffalo Turds
For starters, grab yourself some Texas jalapenos – you’ll recognize them because they’re HUGE! Of course you can use any jalapeño variety, but the bigger the better.
Cut off the top, and use an apple corer to remove the insides. Alternatively, use a knife with a narrow blade, or the back end of a small spoon or fork. It shouldn’t be very hard to remove.
PRO TIP: you can use the stuff you removed, by blending it up with some tomato, and make a spicy salsa for your Tacos!
Now let’s make that stuffing! Get a bowl, and in it mix 1 part cream cheese, 1 part crab meat, and 3-4 chopped up strips of bacon. Add any spice/sauce you want at this point!
Fill those peppers up to the brim, and wrap a slice of bacon around each. Secure with a toothpick.
Line the stuffed jalapenos up on the pit – either using a rack, or simply on the grates.
Cook until the bacon crisps up.
