Here’s a phenomenal homemade beef jerky recipe using eye of round. Forget that store bought jerky, this recipe, much like homemade bacon, will blow your tastebuds into orbit and have you never buying store-bought jerky again!
- 2 C Cold Water
- 1/3 C Worcestershire sauce
- 1 tsp Garlic Powder
- 1 Tbsp Kosher Salt
- 1 Tbsp Crushed Red Pepper
- 1 tsp Black Pepper
- 1 tsp Powdered Ginger
Spicy Beef Jerky – Homemade Beef Jerky Recipe
Get a nice eye of round, with as little fat as possible. Trim any excess fat off, then slice into thin slices (according to preference).
In a glass or food safe container, mix the dry ingredients for the marinade (black & red pepper, garlic powder, kosher salt, and ginger powder). Then add Worcestershire sauce and cold water.
Place the sliced meat in a ziploc bag, then pour in the marinade until it completely covers the meat. Seal the bag whilst trying to remove as much air as possible from the bag.
Refrigerate the bag for 2 days, turning it over every half a day, to marinate the beef as uniformly as possible.
When 2 days have passed, remove the slices from the marinade, and pat dry lightly with a paper towel.
Set up your pit for indirect heat at 175ºF, and place all of the slices on the cooker. Space might be an issue here, since you don’t want slices to lay over each other. One solution would be stackable racks with enough spacing between them, or you could cook them in batches. Smoke the jerky for 4 hours.
Finally, dehydrate the smoked beef overnight. Even after smoking, the meat will retain a lot of moisture, and you’ll see it lose a lot of mass.
