Smoked Pork Country Style Ribs
Step one: seasoning these country style ribs. The seasoning used for this recipe consists of Kosher salt, black pepper and garlic powder. Cover all sides, then follow that up with a good dusting of The BBQ Rub (or your favorite rib rub).
Let the seasoning work on the country style ribs for 30 minutes while you start the smoker. Get it up to 275°F, using peach wood for smoking.
Smoke the ribs for 1 ½ hours. At about 45 minutes give each rib a flip to ensure even cooking. When internal temperature hits 150°F pull the meat off the smoker.
Pour ½ cup of pineapple juice and some BBQ Sauce into a small aluminum pan. Place the ribs in the pan, and cover with foil before putting them back on the smoker. Let the country ribs cook for another hour and check the tenderness at an internal of around 195°F.
At this point place the ribs back on the grate of the cooker. Brush or mop each side with some BBQ Sauce and let the ribs caramelize for 3-4 minutes on each side. Once you see the sauce bubbling and slightly turning colors, your country style ribs are done.
