No party is complete without a platter of smoked party hot wings and no hot wings are better than the ones you’ll cook after following this recipe.
- 2 Cups Hot Sauce
- 1 bottle of Zesty Italian Dressing
- ½ Cup Soy Sauce
- ½ Cup Worcestershire Sauce
Step one is marinating the chicken wings. For the marinade, get a large mixing bowl, and add the hot sauce, Italian dressing, soy sauce, and Worcestershire sauce. Mix well.
Now get your chicken wings and place them into a large enough ziplock bag. Then pour in the brining liquid, squeeze as much air as you can out of it, and seal the bag. Toss the wings around in the marinade to cover them completely.
Place the bag in the fridge, or in a cooler on ice. Let the wings sit in the brine for a minimum of 4 hours, up to overnight.
After allowing the wings to marinate, get them out of the bag, letting the excess liquid drip off. Then place them on a grilling rack, and season all over with your favorite BBQ rub (chicken rub or all purpose rub).
In the meantime, have your pit heat up to around 275ºF. Use a chunk of cherry and/or hickory wood for smoke, and place the wings over indirect heat. Maintain cooking temperature in the 275ºF range.
Let the wings cook for roughly 1 hour, then flip them over and hit them with a little more rub. Cook for an additional 30 minutes up to an hour.
Get the wings off the cooker. Toss them in your favorite sauce, and serve on a platter alongside a dip of your choice.
