You will need

  • Pork Tenderloin
  • Chipotle Sausage
  • Sharp or Old Cheese Slices
  • Bacon
  • (optional) Rub of your choice

Sausage & Cheese Stuffed Pork Tenderloin

Don’t be fooled by how easy this recipe is because it packs some serious flavor! Make sure to use cheese that is either sharp or a bit older and has more flavor in it.

To prepare the tenderloin for stuffing (after trimming if it is needed), simply cut a hole in the thickest end, to create a pocket that runs the entire length of the cut. Be sure to make the cut wide enough to make your life easier when stuffing.

Wrap one or two slices of cheese around the sausage, and place it in the pocket made earlier. You might need more than one depending on the size of the pork loin in question.

If you want to season the pork loin, this is when you should do it (directly on the meat). Whether you do it or not, go ahead and wrap the loin in bacon.

Prepare your pit for indirect cooking at 350ºF. Cook to an internal temperature of 154ºF.
