Maple Sugar Smoked Ribs Recipe
Set your grill up for cooking over indirect heat. Add a couple of maple wood chunks for smoke. Aim for a temperature of 230ºF.
While the pit is getting up to temp, trim any excess fat, loose flaps of meat, and remove the membrane off the ribs. Season with Kosher salt, black pepper and maple sugar.
When the pit is up to temp, place the ribs over indirect heat. Close the lid and let them cook for 5-6 hours, misting every hour to keep them from drying up.
The maple sugar smoked ribs are ready when a toothpick or meat probe goes in and out of the meat with minimal resistance.
