Maple Cayenne Smoked Almonds

- 2 cups whole almonds
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1 teaspoon coarse sea salt
- ½ teaspoon pumpkin pie seasoning
- ½ teaspoon cayenne pepper (more if you like it spicy)
Combine all ingredients in a large zip top bag and mix well to ensure all of the almonds are evenly coated with the syrup mixture. Start your pellet grill on the Smoke setting with the lid open to establish the fire. Spread the almonds on a grill mat (easily available online) or in a grill basket and place on the grill grate. You can also spread the almonds on a large sheet of foil or parchment paper.
Smoke the almonds for up the 3 hours, stirring the almonds ever hour or so. Transfer the warm almonds to a rack to cool, then store in an airtight container. Serve as an appetizer or snack, or wrap in gift bags and give away to friends for the holidays!
