- 2 chicken breasts
- 1/4 C bread crumbs
- 1/4 C mozarella
- 2 Tbsp pecorino
- 3 cloves garlic
- 1 Tbsp olive oil
- pinch of cayenne
- 1/4 t fresh cracked black pepper
- 1/4 salt
- 1/2 fresh chopped parsley and oregano
- 1/4 C marinara sauce
- cushed red pepper
Easy Smoked Italian Chicken Recipe
First, mix the stuffing in a bowl: bread crumbs, mozzarella, fresh herbs, minced garlic, salt & pepper, olive oil, marinara sauce, pecorino and a dash of cayenne pepper. Stir as well as you can using a spoon or fork.
Next, prepare the chicken breasts. Cut a slit in one side and pound to a thickness of 1/4 inch. Add a layer of stuffing and roll up. Place the rolled up breast on 5 slices of pancetta and roll those around it. Secure using butchers twine.
Grill the stuffed breasts over indirect heat at 350°F. Cook to an internal temperature of 165°F.
When done, let the meat rest for about 10 minutes before removing the butchers twine, slicing and serving. Top with marinara sauce and shredded pecorino to impress even more!
