Maybe it seems daunting to attempt such a long cook on a mini smoker, however this easy pork butt recipe might convince you otherwise…
You will need
- 1 Pork Shoulder Roast
- BBQ Rub of choice
- Apple Cider Vinegar
- 3 Apple wood chunks
Easy Pork Butt Recipe On The Mini WSM
It is suggested that you use lump charcoal for this cook for a “cleaner” fire. For a 6 lb. pork butt you should expect a 10 hour cooking time at 225°F.
Ideally, you want to prepare the meat 24 hours before cooking it. Trim off excess fat and season liberally with any rub(s) of your preference. Let the pork shoulder sit in the refrigerator overnight and let it come to room temp ~30 minutes before cooking.
Prepare the charcoal in your Weber Smokey Joe. In the meantime, assemble the mini WSM.
Preheat the smoker to 225°F. Place the roast on the lowest grate, close the lid and let it cook.
Monitor the temperature inside the WSM, and mist with apple cider vinegar every 3 hours or so. Wrap the meat if necessary.
Cook until internal temperature of the pork hits 195-203°F. Remove from heat, wrap up and let it rest for 2 hours.
Pull the pork and enjoy!
