Cuban Lechon Recipe (Whole Hog in a Roasting Box)
To begin, let’s make the Cuban Mojo injection. For this you will need:
- 4 bulbs of garlic
- 4 cups sour orange juice
- 4 tsp oregano
- 2 cups pineapple juice
- 4 tsp powdered bay leaf
- 4 tsp cumin
- 4 tsp salt
Smash the individual cloves of garlic and remove the skin. Put them in a large bowl, and add the sour orange juice, pineapple juice, oregano, powdered bay leaf, cumin, salt and 2 cups of water. Stir well, and let the mix rest for 1 hour to allow the flavors to blend, then strain it out.
Time to get the hog ready! You want it to be able to lay down flat all the way. Therefore you have to split the backbone in two using a cleaver and a hammer (or you can ask your butcher to do it for you.)
Injecting a whole hog can be tricky business. Begin with the hams, by locating the main artery. Injecting right into the artery is the best way to get these flavors distributed inside the meat. Make an incision just above the hoof of the pig, all the way around. This way, when the injection starts dripping out, you will know that it has reached all the way down.
Inject as liberally as you want in the rest of the pig. Make sure you do not tear the skin. Spread the ingredients that you strained out of the injection inside the open rib cage. Also spread your favorite dry rub.
Time to get grillin’! Secure the pig belly-up inside the Caja China grill box, insert a thermometer probe, close it up, and spread 16 pounds of charcoal on top. From here on you will have to follow the instructions on the box itself,depending on the size of the hog you are grilling, outside temperature etc.You will have to add charcoal a few times, so make sure you have enough!
About halfway through the cook, flip the hog. Remember to remove the ash from the top tray, as it acts as insulation and will slow the process down. Spread some salt on the skin to absorb the moisture, and you will end up with some killer cracklins!
When done, remove the hog from the grill box. You can use the fluids that accumulate in the box to create an amazing dipping sauce too!
