- 1 Chuck Steak
- 1 bottle of beer (dark stout)
- ½ cup ketchup
- ¼ cup molasses
- ⅓ cup white or balsamic vinegar
- 2 tsp black pepper
- ¼ tsp cayenne pepper
- ¼ tsp cumin
- 1 tbsp sugar
- 1 tsp salt
- ¼ tsp allspice
- ¼ tsp cinnamon
Beer Marinaded Chuck Steak Recipe
Chuck steak (aka pot roast) is a tough piece of meat, and to make it more tender we’re going to marinade it. Mix the following ingredients in a pan: salt, sugar, ketchup, molasses, vinegar, allspice, black pepper, cinnamon, cumin, and finally the beer. Stir everything together.
Place the chuck steak in a non-reactive container (preferably glass) and pour the marinade until the meat is covered. Use forks or some other tool to poke holes into the steak on both sides to help the marinade get inside and tenderize the meat. Place the container in the fridge overnight.
The next day, remove the steak from the marinade. Let it drain and then pat it dry with a paper towel before placing it on the pit. In the meantime, pour the marinade in a pot, bring it to a boil and let it reduce for a while to use as BBQ sauce later on.
The chuck steak should be grilled over direct heat to develop grill marks. Each time you flip it over, baste with the homemade BBQ sauce. Check internal temperature and cook to your desired doneness.
