Follow along this step-by-step tutorial for a quick and easy bacon wrapped delight that will make mouths water and at the same time still leave room for the main course.
- 2 Chicken breasts
- 15-20 Bacon strips
- Your favorite sauce
Chicken Rub Ingredients
- ½ tsp Kosher salt
- ½ tsp Black Pepper
- ⅛ tsp White Pepper
- ½ tsp Cumin
- ½ tsp Ancho Chili powder
- ¼ tsp Garlic powder
- ¼ tsp Onion powder
- 1 tsp Turbinado sugar
BBQ Bacon Wrapped Chicken Nuggets Recipe
These chicken nuggets are, as mentioned above, super easy to make. First, mix all of the rub ingredients (salt, black & white pepper, cumin, ancho chilli, garlic powder, onion powder and Turbinado sugar) in a small bowl. This is enough for 2 chicken breasts diced into nuggets, so if you are planning to make more, multiply the quantities.
Next, get your chicken breasts and dice them into 1 inch nuggets. Don’t worry about making them perfectly square, but try to keep them all similar in size to ensure they cook at the same rate on the grill. Now give the nuggets a coating of the rub you made earlier.
Then wrap one strip of bacon around each nugget. Apply the remaining rub on the outside. Use a tooth pic to keep each nugget together- or use longer skewers to cook many at once.
It’s time to produce some heat! Use some hickory chips for smoke, and prepare one side of the grill for indirect cooking. Once it is hot enough, place the chicken nuggets over that side.
When the nuggets hit 160ºF internal temperature, glaze with your favorite sauce, flip, and glaze the other side as well. Cook for another 5 minutes, then pull your bacon wrapped chicken nuggets off the heat and serve.
