Bacon Wrapped, Crunchy BBQ Corn On The Cob!
First things first. If you have a choice between yellow corn and white corn, always go for the white corn. It is way sweeter and crisper, and you will notice the difference in the end product.
Once you have your corn nice and clean, it’s time to wrap it in bacon! Thin cut bacon is actually better in this instance, because the fat will render down faster and it will tighten up around the corn. Use toothpicks to secure the strips of bacon around the corn (you will obviously need more than one strip).
Let’s get these babies cooking! Now, you probably want to cook these at the end of a longer cook – after some ribs or a pork butt. Place them close to the heat source and let the bacon render down and tighten up.
After about 20-30 minutes, the bacon should have developed a great color. Pull the corn from the heat, it’s time to move to the next step!
Baste the bacon wrapped corn with any BBQ sauce you like. The sauce will not only give the corn that extra flavor kick, but act as a binder with the corn flakes. Sprinkle on some corn flakes all around the corn.
Get the corn back on the heat for another 15-20 minutes, keeping an eye on it. You want the sauce to tighten up and the corn flakes to toast only a little more, and then it’s done.
